Ramirez Estate produces some great coffees out of the Dominican Republic.
This coffee has a definite strawberry thing going on and is sweet and funky. A bit of chocolate and spice balance out the acidity nicely. We roast it to a medium level to highlight the fruity-wine flavors and aromas from this bean.
During the natural coffee process, the whole coffee cherry is sun-dried with the skin and pulp intact. This allows more fruity and wine-like flavors to soak into the green coffee beans.
